Since kitchen islands can be seen all around the platform, compared to wall or base cabinets, the other sides of the island need skin panels to finish the look. If the island has access to storage through doors and drawers on one side, skin panels are needed to finish the look on the other three sides. Skin panels also help shield any exposed wood of the box structure to prevent it from warping.
